We're good to go there. The second week in October is peak leaf week, truly gorgeous, and I can get you around without crossing the tourists' paths too often. Why, I even know how to get to places you can't get to from here!

Uh, How many X's do you prefer in your chili?

Hi, Tim,
I worked in Mexico for almost 20 years and lived there for 2. I can eat most chili any way it comes. Chili, as far as I'm concerned, should be edible, that is, should not be so hot that you have to take a drink of beer or water after every bite, yet should not be so bland that my daughter would eat it. I would guess I would prefer the X or XX chili.

Cool, I agree that heat is important for the flavor; but, not enough to destroy the ability of the individual to enjoy the chili. An ice cold Red Stripe per bowl of chili is the ratio I strive to keep.

I've got one daughter that wants "Sissy Chili" while my baby girl (24 years old) prefers the XX. Go figure!

A good friend and I manage to make our own hot sauce from Habaneros grown in his garden. Good taste, good heat, and a bit of sweet, all from the peppers themselves. No sugar added...I'll bet a beer you'll like it.

The first time we made it, I cleaned and cut enough Habaneros to make a gallon of sauce, barehanded. I had to put on rubber gloves to pee!! The sting stayed in my fingers for three days afterward.

Hi, Tim,
I don't eat habaneros for many of the reasons you enumerated. I have no problem with habaneros used in the cooking of spicy dishes, though. I do eat jalapenos (don't have a tilde option and don't know how to find and upload a character map to the computer) and serranos (sparingly) and I do enjoy a good salsa or pico de gallo. I AM diabetic and am quite careful about refined sugar, eating as little as possible sugar or high fructose corn syrup.
