De-vein two bunches collards and chop and rinse.
Bring to a boil 3 cups of water.

Add ¼ cup sugar, 3 beef bullion cubes, and ¼ tsp of Chipotle pepper powder.

Add collards and 1/3 cup bacon grease.

Cover and cook over med-low heat.




Next slice 1 box of baby portabella mushrooms.

Melt ½ stick butter in a non-stick skillet.

Add 2-3 Tbs. chopped garlic and 4-5 Tbs. Honey Cup Mustard or Dijon.

Turn on high and add mushrooms.

Sauté on high until mushroom are about ½ way browned, stirring often.

Drain on paper towels.

When collards are done, add mushrooms and 1 - ½ cup ketchup.

I just had some that are the best. I am on Easter vacation in FL.
Ham hocks and all. My brother in law can COOK!!! Home made mac & cheese with japalenos, mmmmmmmmmmmm good!
The kechup is a bit odd, but what the hey, why not? I use it in BBQ ranch style baked beans.

OTG I am so bummed you cannot come to HM in May. Thought I'd finally get to meet you
U need to get healthy,the rehab is going to be hard. Set your mind NOW!!! You NEED to FIGHT to WIN!!! Not go all weight wachery on it.

You can do it!

A southern green.

Some people believe that it became popular in the "South" after the civil war. There was plenty of it left behind by Sherman's troops, they couldn't imagine anyone would eat the stuff so its the only thing they didn't burn.



An older gentleman we know bring us vegtables in return for letting him fish our pond. He does sometimes bring collards, which my wife likes. However the peafowl like it better than anyone, as soon as he stops they jump into the back of his pickup and start eating. Makes a pretty funny sight.
